Below is a recipe for CODFISH WITH SAUCE (Mori ak Sòs). Enjoy!

INGREDIENTS

2 lbs codfish
1 medium onion, chopped
1 medium tomato, sliced
1 green pepper, chopped
1 red pepper, chopped
2 garlic cloves, chopped
2 scallion stalks, chopped
2 tablespoons tomato paste
2 tablespoons oil
¼ teaspoon black pepper

METHOD OF PREPARATION

1. Make sure you de-salt fish by soaking it in water overnight. Rinse three times when ready to cook.
2. Bring 4 cups of water to a boil. Add codfish, and cook for 10 minutes. Drain, and shred fish. Set aside.
3. Heat oil in pan over medium heat. Sauté onion, tomato, green peppers, red peppers, garlic, and scallion. Stir in fish, tomato paste, and black pepper. Add one cup of hot water. Bring to a boil.
4. Lower heat, and let simmer for 20 minutes.
