Rice Recipes

Below is a recipe for BLACK MUSHROOM RICE (Diri Djon-Djon). Enjoy!

INGREDIENTS

2 cups djon-djon
4 cups jasmine rice, washed
1 cup cooked black beans
1 cup of shrimp, deveined
2 garlic cloves, chopped
1 small onion, chopped
1 scallion stalk, chopped
1 whole Scotch Bonnet Pepper
4 fresh rosemary sprigs
3 tablespoons coconut milk
1 tablespoon olive oil
2 tablespoons butter
2 chicken bouillon cubes
2 teaspoons salt

METHOD OF PREPARATION

1. Soak djon-djon in water for 10 minutes, and boil in same water for 15 minutes. Strain mushroom, and reserve 4 cups of black stock. Set aside.
2. In a large pot, heat oil over medium heat. Sauté beans, shrimp, garlic, onions, and scallions for 5 minutes. Add 4 cups of the black stock, and bring to a boil.
3. Add coconut milk, butter, crushed bouillon cubes, and salt.
4. Stir in rice. Top with Scotch Bonnet Pepper. Reduce heat, cover pot, and cook for 25 minutes.
5. Remove pot from stove. Remove Scotch Bonnet Pepper. Fluff rice with fork.
